Like many members of the lactic acid bacteria family, \u003cspan style=\"font-style: italic;\"\u003eLactobacillus\u003c\/span\u003e is capable of restricting the growth of other microorganisms by acidifying its environment.  However, in addition to acidifying its environment, \u003cspan style=\"font-style: italic;\"\u003eLactobacillus\u003c\/span\u003e also produces novel antimicrobial peptides, also known as bacteriocins, that are capable of providing broad spectrum antimicrobial protection.\u003c\/p\u003e\n\u003cp\u003eDuring the manufacturing process, lysozyme is added to the ferment filtrate to facilitate a controlled cell lysis.
